Description

Cut the neck of beef into parts and spread it in a gastronorm container, rub with garlic, salt, pepper, cumin, add lard, cover with water and bake until semi-soft. Baste as needed. Fry chopped onion in oil, add roasted meat, pour in broth and simmer until tender. Boil the mushrooms with cumin. Remove the meat from the juices, thicken with a roux prepared from the remaining fat and flour, pour in the mushroom broth and cream, whisk well and cook. Finally, soften with butter and add cooked mushrooms. Heat briefly, season with salt and pepper if necessary.
