Description

Cut the pancetta into small cubes, throw into a large pan and sauté. As soon as it turns golden, remove from the pan and set aside. Start sautéing the sliced parsley in the rest of the fat. Add chopped garlic and chopped chili peppers and roast together. Pour in white wine and possibly boiling pasta water and add finely chopped parsley leaves. In the meantime, cook the pasta al dente, drain and put in the pan to combine the flavors. Sprinkle most of the grated cheese in the pan, add the set aside pancetta, toss and serve.
