Whisk the coconut milk with the curry paste and bring to the boil. Fry the chopped potatoes, ginger, carrots and onions in oil, add salt, pour in the broth and simmer until almost tender. Add coconut sauce, chopped peppers, chilli and cook briefly. When serving, garnish with fresh coriander and a slice of lemon.
