Cut the meat into strips. Coat them in a mixture of starch and egg mixture and fry in oil. Add bamboo shoots, ginger, almonds, pre-soaked chopped mushrooms, and leeks. Season with salt, chili powder, sugar, and soy sauce. Finally, thicken with soaked starch and simmer briefly.
