Description

Place the meat, root vegetables, lovage, spices, salt, and onion into a pot with cold water, add salt, and bring to a gentle boil. Skim off the foam with a ladle and let it simmer slowly. Strain the broth, add diced carrots, parsley root, and celery, and cook until tender. Season with salt. Cook the fine noodles and liver dumplings separately, then drain and rinse with cold water. Add them to the soup when serving, along with finely chopped parsley.
