Cut the meat into slices, flatten them, season with salt and pepper, and spread with mustard. Place slices of bacon, peeled salami, pickles, and quartered boiled eggs in the center of the meat. Roll up the slices and secure the edges. Brown the rolls on a dark onion base, add broth, and simmer until tender. Remove the rolls and thicken the juice with a roux made from fat and flour. Stir well and simmer. Adjust seasoning with salt and pepper as needed. Return the rolls to the sauce and briefly simmer again.
