Grill the sausage or pan-fry it until golden brown on both sides (about 6–8 minutes). Meanwhile, prepare the chimichurri sauce: chop the garlic and parsley, then mix with olive oil, wine or vinegar, a little water, oregano, chili flakes, salt, and pepper. Let it sit briefly so the flavors can blend. Lightly toast the inside of the halved baguette, fill it with romaine lettuce and the cooked sausage, drizzle with chimichurri sauce, and serve immediately while hot.
