Description

We cut the bacon into strips, partially melt it, and sauté finely chopped onions in it. To the base, we add chopped sauerkraut seasoned with salt, sugar, cumin, and pepper. We briefly simmer the mixture and let it cool. Pork neck is sliced into pieces, lightly pounded, rubbed with crushed garlic and salt, filled with the cooled sautéed sauerkraut mixture, carefully rolled up, and secured with toothpicks. Each roll is salted on the surface and arranged in a gastronorm container. We quickly sear the rolls, then lightly pour pork juice over them and bake until tender, occasionally basting. Once done, we remove and discard the toothpicks from the rolls. We thicken the juice as needed with plain flour, simmer, season with salt, strain it back over the rolls, and briefly reheat together.
