Description

We chop sauerkraut, cover it with water, and cook until tender. In oil, we lightly sauté finely chopped onion with bell pepper, bay leaf, ground black pepper, and diced smoked bacon. We add smoked broth and the sautéed sauerkraut. We thicken the soup with a smooth mixture of flour and cream, stirring thoroughly, then simmer gently while stirring occasionally. Towards the end of cooking, we add diced sautéed sausage. Finally, we season the finished soup with salt, garlic, soup seasoning, and briefly simmer.
