Tofu is cut into pieces, marinated in lemon juice, deggi mirch (Indian curry chili), Indian spice mix, ground coriander, fenugreek, garlic, and ginger. The tofu is allowed to marinate in the refrigerator. Basic red sauce: In hot oil, add cardamom, cinnamon, cloves, onion, ginger, garlic, deggi mirch (Indian curry chili), ground coriander, briefly sauté, add crushed tomatoes, simmer, blend, and simmer. In another hot oil, add whole cumin, sliced red onion, curry, briefly sauté, add spinach, pour in basic red sauce, briefly simmer. Add coriander, turmeric, tofu, mix, simmer, season to taste. When serving, garnish with sour cream.
