Cut the pork into thin strips, season with salt, and marinate in a mixture of starch and egg wash. Sauté the marinated meat in hot oil, then add soy sauce, chili seasoning, and sugar, allowing the sugar to caramelize. Splash with water and wine, slightly thicken with starch, add peanuts, and gently simmer. Finally, adjust the flavor with sugar, vinegar, and soy sauce. Reheat the meat under a lid at 125°C with steam.
